Kanel is a Swedish konditori that opened its doors in Thessaloniki in 2020. The owner’s family, having spent many years in Sweden, brought back not only the Scandinavian mentality but also a classic recipe: the beloved kanelbullar. Our design was inspired by the simplicity of Scandinavian interiors, reinterpreted through the lens of Thessaloniki’s warmer character. The space is conceptually divided into two zones: the warm and the cold. The warm zone, enveloping the bar and preparation area, is painted in a terracotta tone reminiscent of sunbaked clay. It forms a nest-like environment, achieved through the seamless application of decorative microcement, which eliminates visible joints and enhances the monolithic feel. In contrast, the cold zone is the seating area—conceived as a corridor leading toward the nest. The floor is finished with a contemporary take on Venetian terrazzo by Emil Group, while white-toned marble fragments from the Medley collection by Ergon underscore the contrast between the two areas.

Neon quotes embedded in the design reflect Kanel’s ethos and double as playful, Instagrammable moments. With the motto “a piece for everyone,” Kanel warmly welcomes all who enter.

An earth-toned geometric wall graphic bridges the spatial dichotomy. Its pattern—an interplay of diverse forms—acts as a visual thread connecting warm and cold, nest and corridor.
